Yes today is Fat Tuesday, better known as Mardi Gras. It is a day to collect as many beads as possible (not fun when you reside in Canada's capital, brrrr!). But you can then warm up with a hearty bowl of gumbo. As I will not be cooking tonight I have posted a few cajun and creole recipes for the occassion. Enjoy!
