Moroccan Roasted Butternut Squash




I just can't get enough of squash these days...from soups, stews to side dishes squash is such a flavorful and colorful vegetable. I did not want to make more soup as my freezer is packed with soups, so I decided to make a spicy side dish I found from Kalyn's Kitchen. The Moroccan spices add so much flavor to the squash, not to mention provide a mouth watering aroma while baking. It made alot, especially since I was only serving two. But it was excellent reheated the next day. If anyone is looking for a good Thanksgiving or Christmas side dish, I would highly recommend this.

1 large butternut squash, peeled and cut into 1" cubes
2 T olive oil
1/2 tsp salt
fresh ground pepper

Spice Mix

2 tsp ground cumin
1 tsp ground coriander
1/2 tsp chili powder
1/2 tsp paprika
1/s tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground ginger
1/8 tsp cayenne pepper
pinch cloves

Preheat oven to 450F. In a roasting pan place the cubed squash, add oil and 1 tsp of the Morroccan spice mix. Mix well so all the squash is coated. Bake for 40 min.

Ahh! Butternut squash is the one and the one only, divine - excellent idea to cook it Moroccan style!

Excellent idea.
I was just telling Peef that I needed to start gathering up a few more squash concepts. We have a whole load of butternuts to use in the next couple of months.

This is definitely making the cut.

Another fine squash recipe. I had no idea how very versatile squash really was until recently. This dishi is really quite unique - I like it.

Yum! I'm obsessed with squash lately, too. It seems to be disappearing from the roadside stands, so I've got two big squash standing there and I can't figure out how to use them - the pressure's too great! Maybe this will be the remedy.

I can't even believe that you made this- we are definitely on the same wavelength. I was on Kalyn's site last night looking at this VERY recipe! Weird huh? I actually chose another one of her butternut squash recipes to try out (which was also very good) but this one looks good too!

That sounds like a very tasty spice mix! It would be a good one to keep in mind for roasting other vegetables.
